For the past couple of weeks, I’ve been going through my older recipes on this blog and trying to come up with a solution to have these recipes be for 1 or 2 servings only. I only cook for one person. It used to be 2 when I was married but that was a couple of years ago, and now I’m divorced. I’ll maybe cook for 3 or 4 people when there’s company and that’s it. 8X8 casserole dishes or 8X13 casserole dishes are WAY TOO much food for 1 person.

I know if you make that much food you can freeze it, but I am not the type of person that likes to eat the same thing every day. If I have the same leftovers for 3 days in a row I’m so bored with it already. That leads to food waste, and food waste is something I’d like to get under control as well in this house. I think owning smaller sized serving pans is an awesome solution to all the casserole type dishes on my blog.

Cooking for 1 or 2 people

Freeze all the leftovers for later use. This is pretty much a no brainer, but you need to ask yourself if you’re going to eventually eat all that food. Have you ever Kon Mari your fridge or freezer before and found leftovers that you never ate?

If you make something and you know you are going to be seeing that person offer them some leftovers. I did this with my one friend who worked construction all day long.

Purchase smaller sized pans for only 1 or 2 servings. Enter the 5X5 in pan or casserole dish. This is genius and this lasagna recipe was the first time I tested this 5X5 in pan for the first time with this lasagna recipe for 2. It worked out great! In fact, it made me want to store my other casseroledishes somewhere else other than the kitchen so they aren’t taking up space.

After using this dish, I am now going to make more recipes on this site for only 1 or 2 servings.

The casserole dish was only 5.99 at my Tuesday Morning store. I’m going to be using it for cakes and desserts as well like cobblers or apple crisp!

How to Make Lasagna For 2

  1. In a non stick skillet, cook ground beef and garlic over medium heat until well browned. Stir in tomato sauce, tomato paste, and water. Season with sugar, seasoning packet, oregano, and bay leaf. Simmer, covered, for about 1 ½ hours, stirring occasionally.
  2. Bring a medium sized pot of lightly salted water to a boil. Break 3 lasagna noodles down the middle. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water.
  3. In a mixing bowl, combine cottage, parmesan cheese, and egg. Season with salt and pepper.
  4. Preheat oven to 375 degrees F (190 degrees C).
  5. To assemble, spread ½ cup of meat sauce in the bottom of a 5x5 inch baking dish. Arrange 2 noodles lengthwise over meat sauce. Spread with one half of the cottage cheese mixture. Top with a ½ of the mozzarella cheese. Spoon ½ cup of meat sauce over mozzarella. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  6. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.
  7. I always make an extra couple noodles, just in case one breaks.

Tips for Lasagna Recipe for 2

My Mom’s recipe for Meat Sauce is great for lasagna and that is what I used in this recipe.

I used mozzarella and cottage cheese because that is what I had on hand. Use whatever cheese you like if you don’t want to use cottage cheese or mozzarella. Ricotta cheese works great for lasagna.

How to freeze lasagna? You can freeze the leftovers by letting the lasagna completely cool and storing the slices in individual air tight containers to make for later.

What to serve with lasagna? When I make lasagna, I like to serve it with some good crusty bread or Caesar salad on the side.

1 8 oz can tomato sauce
