What is apple crisp?

Apple crisp is a baked dessert made with apples and a crunchy streusel topping made with flour, butter, sugar, and oats. It’s commonly served warm with vanilla ice cream.

Apple crisp vs apple crumble:

The original difference between an apple crisp and an apple crumble lies in the streusel topping. A crumble topping is typically made with just flour, sugar, and butter. And when baked it’s like buttery-sweet bread crumbs. A crisp topping would contain oats and the oats crisp up as it bakes, hence the name, and it has more of a granola texture to it. However, as time has gone by, the lines have blurred and the names crumble and crisp are now used interchangeably. (source: The Kitchn)

Why this recipe is so great:

  • It’s as easy as can be. All you have to do is slice, mix, and bake. Since this recipe uses melted butter there is no need to cut it up and work it in with your hands. You just melt the butter in the microwave and mix it in with a spoon. It’s much easier than having to get your hands all greasy.
  • Perfect crumb topping to apple ratio. There is just the right amount of crunchy streusel to every bite of apple. The texture is crunchy mixed with soft and silky apple slices. The taste is fruity, nutty, and buttery with a warm hint of brown sugar and spice. It’s all around applelicious!
  • Here are some reviews:

“This recipe is a delight!! We didn’t need to run out for anything, because we had what was needed in the house already. We absolutely loved it!! I used Granny Smith and Macoun apples.” – Bethany

“Made this with my 13yr old son. All I did was peel and cut the apples. Great mother-son moment. He was so proud it turned out as this is his and his father’s favourite dessert. Thank you for the amazing recipe.” – One happy mom 😊

Thank you for explaining the difference between a crisp and a crumble. I grew up with apple crumble (calling it a crisp) and still much prefer my oatmeal in cookies rather than on my apples. 😉
That said, every one of your recipes I have tried turned out great and were hits with the family.

I don’t see why not. If your canned apples are already sweetened then omit the sugar for the apples. Bake until golden on top. Enjoy!

In the Original Picayune Creole Cook Book (1901) a recipe identical to the Brown Betty traveled under the name “Mulatto's Pudding” furthering the idea that the sweet-sounding Brown Betty was more a race-based epithet towards its maker than a homey moniker denoting golden-brown bread crumbs.

Baking: Start baking the apple crisp covered with foil. This allows the apples to soften without any risk of the topping over-browning. After about 20 minutes, remove the foil and let the crisp finish cooking uncovered. Once the juices are bubbling, the topping is golden brown, and the apples are tender, it is done!

Why did my apple crisp turn to mush? ›

Picking the wrong apples

Softer apples like Red Delicious, Golden Delicious, or Macintosh break down too much in the heat of the oven, basically turning into applesauce. So avoid those, and opt for a variety that's firm and crisp like Granny Smith, Fuji, Gala, or Honeycrisp.

Why are some apples not crispy? ›

Why are some apples mealy while others are crisp? A. “When apples are mealy, the cells split apart from each other when you bite into the fruit, whereas with crisp fruits the cells rupture and release juice,” said Susan Brown, an expert in apple breeding at Cornell University who has helped develop several varieties.

Should you refrigerate apple crisp before baking? ›

You can prepare the crisp through step 3, then cover and refrigerate for up to 1 day before baking. You can also freeze the unbaked crisp for up to 3 months. Allow to thaw overnight in the refrigerator, then continue with step 4. Bake time will be a little longer since the crisp will be cold.

Why do you put lemon juice over the apples when making an apple crisp? ›

I prefer slicing the apples the day I plan to bake the crisp as they start to oxidize once they're sliced and turn brown in color. Add a little extra fresh lemon juice to help prevent the apples from turning super brown.
